To celebrate the release of our NEW cookbook (containing 100+ donated recipes from DC Diamonds supporters & local restaurants), we’re hosting a cooking class to preview some of the recipes inside & celebrate the end of Spirit Week 2021! Join D.C. Diamonds volunteer & avid home cook PJ Weaver as he shows you how to make a margarita (cocktail or mocktail), restaurant-style guacamole, and a queso blanco dip!

Ingredient List:

  • Margarita
    • One Orange
    • Two Limes
    • Tequila (seltzer for mocktail)
    • sea salt
    • sweetener of your choice (Honey, Agave, Or Simple Syrup)
  • Guacamole
    • 4 ripe avocados
    • 2 roma tomatoes
    • one small onion
    • one jalapeno
    • Two Limes
    • One Bunch cilantro
    • Salt/Pepper/Garlic Powder
  • Queso Blanco
    • 1 block regular cream cheese (8 oz.)
    • 1 pound white american cheese
    • salted butter
    • 1 (4 ounce) can diced green chilies
    • 3-4 Tablespoons milk
  • Other supplies:
    • Tortilla Chips of your choice
    • Two large bowls
    • An oven-safe pan or casserole dish
    • Chef’s Knife & Cutting Board
    • A short glass (for your marg)
    • Cocktail shaker or Mason jar (optional)
    • Plastic Wrap (for storing leftovers)
