Help D.C. Diamonds celebrate its’ annual Spirit Week by participating in Tasty Tuesday on Tuesday, 2/8 – featuring a virtual cooking class taught by PJ, a D.C. Diamonds Volunteer!! The class is free to participate, and will start at 6:30pm EST on Tuesday 2/8, via Zoom. We’ll be cooking two recipes out of the DC Diamonds Cookbook (also available for purchase through our website)! See the list below for everything you’ll need:
Roasted Butternut Squash Risotto (vegetarian friendly! serves 4)
Ingredients:
- The staples (Butter, Salt, Pepper, Olive Oil)
- 1 Yellow Onion
- 1 Head Garlic
- 6 cups broth of choice (vegetable, chicken)
- 1 1/2 cups arborio rice
- 1 small butternut squash (whole or pre-diced)
- 1 cup Parmesan Cheese
Optional flavor-boosters:
- 1/2 cup white wine
- Red Pepper Flakes
- 1 bunch Fresh Sage Leaves
The Bee’s Knees Cocktail
- 2oz Clear Liquor of choice (gin recommended, also works with vodka)
- Juice of 1 Lemon
- 1 tbsp Honey

1. Knife & Cutting Board
2. Skillet (1)
3. Oven Baking Tray (1)
4. Large bowl (1)
5. Med/Large Pot (1)
6. Ladle or Cup Measure (1)
7. Cheese Grater (if your Parmesan isn’t pre-grated)
